INGREDIENTS:
- 1 1/2 cups blanched almond flour
- 1/4 cup coconut flour
- pinch of cinnamon
- 2 T granulated sweetener
- 1/2 tsp vanilla extract
- 1/2 cup nut butter
- 1/2 cup sticky sweetener
- 1 T + milk of choice
For the protein frosting
- 3 scoops vanilla protein powder
- Milk of choice
- 1/2 tsp granulated sweetener
For the coconut butter frosting
- 4-6 T coconut butter
- 2 T pure maple syrup
- Dairy-free milk
INSTRUCTIONS:
Sugar cookie base
1. Line a baking pan with tin foil and set aside
2. In a bowl, combine the flours, cinnamon and granulated sweetener and set aside as well
3. In a microwave-safe bowl melt the cashew butter with the sticky sweetener. Add the vanilla extract and mix until fully combined together. With a tablespoon, add the milk until thick batter is formed.
4. Pour the batter in the baking pan. Sprinkle 1/2 teaspoon of granulated sweetener and refrigerate for 10 minutes. Once the base is firm, add frosting and refrigerate another 30 minutes.
Frosting
1. Combine the ingredients and use milk to thin out until you get a very thick frosting.
