Blueberry Banana Cinnamon Pancakes


Super healthy and super delicious = healthylicious! These pancakes are a must try. Easy, low carb, gluten free, paleo breakfast for the whole family.

Ingredients:

  • 1 cup blueberries
  • 1 large ripe banana
  • 3/4 cup almond milk
  • 1 1/2 cup brown rice flour
  • 2 teaspoons baking powder
  • 1 egg 
  • 1 teaspoon cinnamon
  • pinch of sal

Instructions:

  1. Mix all of the ingredients in a mixing bowl.
  2. Heat a frying pan with one tablespoon of coconut oil on medium heat. Once the pan is hot, pour in the batter to form a pancake in any size you'd like. Cook for a couple of minutes on each side until golden brown in color. Remove and serve and repeat for the rest of dough.
  3. Top with more blueberries, cinnamon, and maple syrup.
